Watergate Salad

            Watergate Salad has been wildly popular on the East Coast for about 30 years. I first heard about it from a neighbor who swore that someone in her family had invented it while watching the Watergate Investigations. I’ll take that with a grain of salt, but the recipe is so easy and the salad is so good that I’m amazed that it hasn’t become known in the rest of the country. This one will be a family favorite, I guarantee it!

1 package Jello pistachio instant pudding (4 oz. size)
1 can crushed pineapple in juice (20 oz size)
1 C. mini marshmallows
1/3 to ½ C. walnuts
2 C. Cool Whip

 

            Place in a bowl, pudding, pineapple and its juice, marshmallows, nuts. Stir until well blended. Add the Cool Whip blending thoroughly. Refrigerate for 1 hour or longer. At Christmas you can add candied cherries to make a great holiday treat!

Summery Potato Salad

2 C. cold boiled potatoes cut into half inch cubes
1 apple cut into ¼ inch cubes
1C. finely cut celery

Dressing:
1 tsp. salt
1 tsp. mustard
2 tsp. sugar
Small amount of cayenne pepper
1 tbl. Flour
The yolks of 2 small eggs or one large egg
¾ C. milk
½ C. hot vinegar
2 tsp. melted butter

Mix the dry ingredients.
Beat the egg yolk(s) slightly, add to the dry ingredients, and mix well.
Add the milk while stirring all the time.
Pour into a double boiler and add the hot vinegar: stir until thick.
Add butter.
Cool before using.

Place potatoes, apples and celery into a bowl and add enough dressing to moisten. Sprinkle with the cayenne.

Green Goddess Salad

Here’s an old idea that needs to be revived. Green Goddess salad was very popular in the 70’s and 80’s
and many wish they still had the recipe. It’s a real warm weather treat and served with warm rolls and
ice tea this one is sure to be a hit.

½ head of Bibb lettuce.
½ head Iceberg lettuce
1 Tb minced onion
2 tsp chopped chives
1 ½ C. mayonnaise
1 Tb. milk
1 Tb. water
2 minced anchovy fillets
1 Tb. vinegar
¼ tsp pepper

 

Place all of the ingredients (except the lettuce) into a jar and screw the top on the jar tightly.
Shake the jar until all the ingredients are well mixed.
Chill

When you are ready to serve your meal -
In a salad bowl tear all the lettuce into bit sized pieces.
Pour the Green Goddess salad dressing over the lettuce.

You can make this simple recipe your own by adding your choice of tomatoes, mushrooms, carrots etc.
